Darlish

July 5, 2017Halal Gems Team

Darlish explores their Persian heritage through incorporating luxurious flavours into desserts, ice cream and halva. Read our interview with Laura Dawson, Founder of Darlish, below.
Describe your relationship with food in three words.
Dessert over starters.
If you weren’t a street food trader what would you be doing? Tell us about your journey.

Still working as a Speech Therapist full-time. I still work a couple of days a week to keep my hand in and skills up.
What would be your last supper or your last meal on earth be if you could choose?
Ghormeh Sabzi – without a doubt. It’s a lamb stew full of vegetable leaf and fenugreek and dried Persian limes and kidney beans. It’s hearty and fresh at the same time….there is just so much goodness in it. My parents would start cooking it early in the morning and it was torture waiting until the evening to eat it!
Who would you love to cook for (past or present)?
Kate and Wills
What is your foodie guilty pleasure?
Fish fingers 🙈
What’s been the hardest thing so far?
Learning to make ice cream. I had no idea about the science behind it – you have to consider scoopability, stabilisers and sweetness which in turn affects the freeze points and….I could go on! I have litres of reject batches for each flavour before I had my final recipes
What’s been the highlight so far?
Having Yotam Ottolenghi try our products and say they were “utterly delicious.”
What advice would you give to people who are thinking of starting their own street food business?
Keep tweaking. The first product you start with may not be the final one. You have to be prepared to take on feedback and make your offering better. Beware though- not all advice and feedback is good or worth implementing.
