Mamasons Dirty Ice Cream is Europe’s first Filipino island ice cream parlour. A small batch producer specialising in flavours indigenous to the Philippines and its surrounding islands, Mamasons, has used its team of authentic in-house flavour innovators to develop unique flavours such as; ube (the new matcha), pandan (the asian vanilla), calamansi (filipino yuzu) to name just a few of the exotic offerings. Describe your relationship with food in three words.
Intimate, infinite and pornographic.
If you weren’t a street food trader what would you be doing? Tell us about your journey.

I’m actually a qualified accountant. I left accounting because I prefer cooking food than cooking books . That said if I didn’t get into the restaurant business I would have probably roamed the earth and became a king crab fishermen doing those life threatening food occupations that you see on the discovery channel.
What would be your last supper or your last meal on earth be if you could choose
I’ve recently been obsessed with Ethiopian food, there’s a dish called kitfu which is similar to a steak tar tar and served with injera which is a sour dough creep and aybb degomen which is a pureed cottage cheese. These combinations are outrageous, it’s the only dish I actually crave for that or Bintang’s chicken wings.
Who would you love to cook for (past or present)?
BIGGIE SMALLS.
What is your foodie guilty pleasure?
Nachos and cheese specifically odeon cinema nachos, best bad food there is.
What’s been the hardest thing so far?
The menu development during Ramadan, coming up with these flavours during working hours is difficult specially not being able to taste it in the moment. Its been the most challenging thing through this whole project.
What’s been the highlight so far?
I get to eat ice cream everyday and say its my job.
What advice would you give to people who are thinking of starting their own street food business?
Master the art of sleep deprivation.
