Rola Wala combines epic street food flavours discovered on Kolkata backstreets, Bombay beaches, and Keralan waterways. Their first London restaurant opens in Spitalfields in July. Read our interview with Mark Wright, Founder of Rola Wala, below.

(It’s) all about flavour.

If you weren’t a street food trader what would you be doing? Tell us about your journey.

Take food away and I’d just be on the street! Rola Wala was an idea born in Bombay, that grew up in London.

What would be your last supper or your last meal on earth be if you could choose?

Indian feast with every meat & veg dish under the sun.

Who would you love to cook for (past or present)?

My girlfriend (present).

What is your foodie guilty pleasure?

Fried chicken.

What’s been the hardest thing so far?

Margins.

What’s been the highlight so far?

Opening our first restaurant.

What advice would you give to people who are thinking of starting their own street food business?

Make it different.
